You've found a nice skin/style that you want to install on your forum? GOOD!
You can do this in 4 easy steps:
download skin's zip file to your computer and extract somewhere on your computer where you'll easily find it. Desktop works best for most people.
Most skins come in a folder named for the skin. So, upload the skins' folder to your forum's images directory. Your image path will look something like this images/name of skin/all other folders inside (attachments, buttons, misc, statusicons, etc. )
Go to your ACP > Styles & Templates > Download / Upload Styles
On the right, go to Import Style XML File - click on browse, locate the xml file on your desktop (or whereever you saved the download at), double click it so that it shows in the browse box, then scroll to the bottom and click Import.
If your images don't show up on your forum, re-check where you downloaded your images to.

NOTE: all skins designed by miner, need to be uploaded to your forums' images/styles folder. Your images directory doesn't normally have a styles folder, so you'll need to create one.

I was going to ask if there is any particular site with different options for skins. I'm sure that there are a ton out there, but suggestions wouldn't hurt. :)

Vb.org has plenty as well.

I like this one from the site you suggested Scott. Nice color scheme for what I'm looking for. Only problem is that it has a coffee theme. Can I remove that header (top left) and add my own logo there?

Also, those icons with little coffee cups...can they be changed to be little sort of mouse ears kinda to the side or something? I've got a friend that is a graphic design artist, so I'll hopefully have him get the logos and little pics for me to change. Is that a possibility?

Here's the one that I was talking about...

Yep, to both qns. Once you've installed it you should still be able to update the logo/header, and the icons.

Wow, that is so easy to do!

Well, aside from the piece that I'm obviously missing (which I'm sure is simple, but I haven't done yet)....how do I upload the skins' folder to your forum's images directory?

I used FileZilla to upload the images to my FTP server, but now it's done and I still don't see the images. Am I not doing something?

Are the images in the correct location?
Should be in images/coffee/

Am I looking in the right place? Image Paths?

If so, the buttons images folder shows this "images/coffee/buttons" and the rest are similar. The only one without is the "Title Image" line.

Same problem here. It's giving me errors when I try and get the skin to change. Should I delete this new skin and get everything else working first before proceeding?
